1. Vegan Ranch Pasta Salad

This pasta salad is a great option with its fresh, crunchy vegetables and delicious, creamy ranch dressing. To make vegan ranch pasta salad, you need 1 1/2 cups of vegan ranch, 16 ounces of your choice of pasta, one cup of fresh broccoli florets, one cup of fresh cauliflower, one cup of sliced carrots, and one cup of chopped cucumber.

When you’re ready to start cooking, boil the pasta according to the package instructions. As it cooks, cut the vegetables. When the pasta is finished cooking, let it cool. Lastly, toss it with the veggies and ranch until it’s well mixed. Refrigerate and serve cold!

2. Vegan Spinach Pinwheels

These delicious vegan spinach pinwheels make a great snack, and they’re sure to be a fan-favorite! To create these pinwheels, you will need two vegan and gluten-free puff pastry sheets, six ounces of baby spinach, eight ounces of plain vegan cream cheese, 1/2 tsp of dried parsley, 1/4 tsp of dried thyme, 1/4 tsp of dried tarragon, 1/2 tsp of dried dill, one tsp of onion flakes, 3/4 tsp of garlic powder, 1/3 tsp of salt, and a dash of cinnamon and nutmeg.

To create the pinwheels, you first need to thaw the puff pastry. Next, add spinach to boiling water and let it sit for three minutes. After that, drain the spinach and add it to a medium-sized bowl. Toss in the cream cheese, herbs, and spices, mix well, and adjust the flavor if needed.

Take one puff pastry sheet and place it on top of another, then roll them out to a rectangle that is 12 by 14 inches. Now, spread the spinach mixture onto the puff pastry evenly. Roll the puff pastry to make a cylinder, and refrigerate it to harden.

Once the roll has hardened, slice it with a sharp knife. You want the pinwheels to be 1/2 inch or less in thickness. Then, place your slices on a baking sheet lined with parchment paper and bake at 400 degrees until they’re golden. Finally, let them cool for a few minutes before serving.

3. Creamy Garlic Onion Dip

This delicious garlic onion dip is vegan, gluten-free, and nut-free! Its sweet, roasted garlic & caramelized onion flavor is sure to make it a hit at your next party. To make this dip, you will need two tsp of olive oil, one whole head garlic, two heaping cups of onion (peeled and thinly sliced), two tsp of sugar, twelve ounces of silken tofu, one tbsp of nutritional yeast, two tsp of white miso paste, one tbsp of white wine vinegar, 1/2 tsp of salt, one tsp of dried thyme, and 1/4 cup of your choice of plant-based milk.

The first step in creating this dish is to preheat your oven to 400 degrees. Next, you will need to slice a quarter of an inch off the top of the garlic head. Take a square of aluminum foil, place the garlic head-down in the middle of the foil, and wrap it tightly. Then, bake the garlic head in the oven for around forty minutes so it becomes soft. Once the head is completely soft, remove it from the oven and allow it to cool inside of the foil.

While you wait for the garlic, heat a sauté pan over medium-low heat with olive oil. Add the sliced onion and cook slowly for thirty minutes. Once the onion is soft, add the sugar and cook for five minutes. Remove the onions from the heat and set aside.

Now, add the tofu, nutritional yeast, white miso, vinegar, and salt into a blender. Remove your garlic from the foil and gently squeeze it into the blender. Add half of the onion and the vegan milk. Blend the ingredients until smooth. Then, add the thyme and the other half of the onion and stir. Lastly, spoon into a dish and serve!
