Apple Nut Butter Sandwiches with Snacks

This lunch idea is healthy, filling, contains a wide variety of ingredients that will keep your kid satisfied. You will be making three apple nut butter sandwiches and two cucumber hummus sandwiches. As a side, you can throw in an Oatmeal Cranberry Gems Cookie and grape tomatoes.

To prepare the apple nut butter sandwiches, you will need to core your apples, cut them into slices, and add your nut butter of choice in between. Next, for the cucumber hummus sandwiches, slice your cucumber and add your hummus of choice in between. Now, add everything into a lunch box, and your child has a nutritious meal to take for the day!

Mini Veggie Sushi Rolls

Mini veggie sushi rolls are a unique lunch idea that will be a surprising change for your kids. What’s even better, they’re also easy to make! You will need 1/4 cup of prepared quinoa, 1/4 tsp of apple cider vinegar, 2 dozen thin slices of vegetables, one pack of seaweed snacks, and one small bowl of water to create them.

In a small bowl, combine the quinoa and apple cider vinegar. Have the vegetable slices ready along with the quinoa mixture and water bowl. Grab a seaweed snack, lay it vertically, and add a teaspoon of quinoa and 2–3 veggie slices on top. Make sure to add the veggie slices horizontally and on the short end closest to you.

Now, roll the seaweed. This part can be a little tricky, so use your fingers to hold the roll in place and control the stuffing. Lastly, once you get close to the end, wet your fingers with the water, run it along the end, and finish rolling. Set the roll aside and leave it sealed side down for a few minutes to make sure it stays in place. Repeat to create more!

Avocado, Spinach, Cucumber, Hummus Sandwich with Snacks

This school lunch idea is heavier than the others, as this sandwich is filled with a nutritious variety of avocado, spinach, cucumber, and hummus on gluten-free bread. Round out the meal with a side of oranges, a fruit wrap, and an Italian Rainbow Cookie.

To create the sandwich, you first need to cut your avocado, remove the pit, and scoop the avocado onto one slice of bread. Next, take your other piece of bread and spread your hummus onto it. Lastly, add the spinach and cucumber. Throw in the sides, and your lunch is ready to go!

Vegan Cheese Quesadillas

These filling and delicious quesadillas will be a hit with any kid. To create this lunch idea, you will need one can of corn, four tbs of nutritional yeast, five cloves of garlic, salt, pepper, 1-2 smashed avocados, one cup of cherry tomatoes, and gluten-free flour tortillas.

Add the corn, garlic, nutritional yeast, salt, and pepper into a blender or food processor. You want these ingredients to be well-combined, but don’t process them for too long, because then it will become too smooth.

Next, add the smashed avocado and cherry tomatoes to your tortilla, pour the vegan cheese, and place another tortilla on top. Cut the quesadilla into triangles and brush them with some oil. Bake it at 400°F on a baking sheet with parchment paper until its edges are golden.

Chickpea Salad Sandwich

This sandwich is just like a chicken sandwich, but instead of chicken, you’ll use chickpeas. To make this sandwich, you will need one 19oz can of chickpeas drained and rinsed, three tbs of vegan mayonnaise, one tbs of dijon mustard, two tsp of capers, 1/4 tsp of salt, 1/4 tsp of black pepper, two stalks of celery chopped, 1/4 of a red onion chopped, eight slices of bread, and lettuce for the topping.

First, add the chickpeas, the vegan mayonnaise, dijon mustard, capers, salt, and pepper to a food processor. Use the pulse option and stop periodically to scrape the sides. Next, add the celery and red onion and pulse to distribute evenly. Lastly, spread the chickpea salad on bread, and top with your favorite veggies.
